2 lbs Fresh, Prime Hanger Steak
2 Cups Packed Light or Dark Brown Sugar
½ Cup Balsamic Vinegar
¼ Cup Worcestershire Sauce
6 Garlic Cloves Smashed and Roughly Chopped
6 Fresh Rosemary Leaves [Optional]
Kosher Salt + Fresh Ground Black Pepper

Instructions

Combine the Sugar. vinegar, Worcestershire sauce, garlic, and rosemary (if using) in a large casserole dish.
Add steaks to casserole pan and coat on all sides.
Heat Grill or grill pan to high heat.
Remove hanger steaks from marinade. Season both sides with salt.
Add steaks to grill and cook until caramelized on both sides, about 3 minutes per side for medium-rare.
Remove steaks from grill and rest 5 mins, using elevated wire rack if available to maintain crust, add pepper if desired.
Slice steaks against grain and serve.
